Sinapius Esme Rouge 2016
Sinapius 2016 Esmè Rouge | 100% Estate Grown. 50% Gamay, 40% Pinot Noir and 10% Pinot Meunier. The Gamay for this wine is the newest player in our vineyard, making its inaugural debut. The Pinot Noir and Pinot Meunier were sourced from one of our east facing blocks, originally planted in 1998. The Gamay underwent wild yeast whole cluster carbonic maceration for 3 weeks, without any addition of sulfur. The Pinot Noir/Meunier was whole berry, wild yeast fermented, again without sulfur, for 4 weeks. Matured in old barriques and puncheon, and bottled without fining and filtration in March 2017. Minimal sulfur added just prior to bottling.
